BROWN SUGAR AND BOURBON CHERRY Crisp

This cherry crisp is just heavenly! The filling is made with dark sweet cherries spiked with bourbon and flavored with brown sugar and a little orange juice, and the topping is the perfect crisp topping—buttery and full of brown sugar, oats and a pinch of orange zest. This makes the perfect date-night dessert or the perfect treat to share with a friend.

Yield: 2–3 SERVINGS

FOR THE FILLING

14½ oz (412 g) dark sweet cherries, rinsed, pitted and halved (about 2⅔ cups)

3 tbsp (40 g) granulated sugar

1 tbsp (13 g) packed brown sugar

3½ tbsp (28 g) cornstarch

½ tsp vanilla extract

2 tbsp (30 ml) bourbon

1 tsp orange juice

½ tsp orange zest

FOR THE TOPPING AND FOR SERVING

¼ cup plus 1 tbsp (53 g) all-purpose flour

⅓ cup plus 1 tbsp (95 g) packed brown sugar

¼ tsp cinnamon

¼ tsp orange zest

¼ tsp salt

4½ tbsp (64 g) cold salted butter

½ cup (50 g) old-fashioned whole rolled oats

Vanilla ice cream or Classic Vanilla Whipped Cream

PREP: Preheat the oven to 350°F (180°C). Spray a 6-inch (15-cm) baking dish with nonstick spray.

MAKE THE FILLING: Add the cherries, granulated sugar, brown sugar and cornstarch to the baking dish, and stir well to combine. Add the vanilla, bourbon, orange juice and zest, and stir to combine.

MAKE THE TOPPING: In a medium bowl, whisk together the flour, brown sugar, cinnamon, orange zest and salt. Cut in the butter with a pastry cutter until you have pea-sized chunks scattered throughout. Stir in the oats. Sprinkle the topping evenly over the cherry filling.

BAKE: Bake for 45 to 48 minutes. The filling will be bubbly and the topping will be golden brown. You can also poke the fruit through the topping with a fork. The cherries should feel tender. Let sit for about 10 minutes before digging in.

SERVE AND STORE: Enjoy warm with vanilla ice cream or Classic Vanilla Whipped Cream. This is best enjoyed when it’s fresh from the oven, but you can store leftovers covered in the fridge for 2 to 3 days.
